How To Make Devilled Eggs Canapés

Step 1: You will need

• 6 hard boiled eggs , peeled
• 3 tbsp mayonnaise
• 20 g melted butter
• 1 tbsp crème fraiche
• 2 anchovy fillets , cut in half
• ½ tbsp crispy bacon bits
• 1 tbsp smoked salmon , chopped
• 1 tbsp chives , chopped
• a few tarragon leaves
• 1 tsp caviar
• salt
• pepper
• 1 cutting board
• 1 knife
• 1 blender
• 1 spoon
• 2 tea spoons
• 1 piping bag

Step 2: Prepare the ingredients
Get all your ingredients ready to cook.
Step 3: Prepare the eggs
Carefully, shave off both ends of the eggs and then slice in half using the large knife.
Step 4:
Using a teaspoon, scoop out the yolks and place into the bowl of the blender by gently squeezing the egg the yolk should pop out.
Step 5: Make the yolk filling
Take a spoon, add the mayonnaise to the egg yolks, cover and blend until it becomes smooth. Then, add half the melted butter, put the lid on and blend again to combine. Take the lid off and add the remaining melted butter, put the lid back on and blend once more until it becomes a smooth velvety paste.
Taking your piping bag, make a cuff and then spoon the yolk filling into the piping bag. Open the cuff and close the bag.
Step 6: Fill the eggs
With your piping bag, pipe the mixture into the centre of each of the egg.
Step 7: Garnish and serve
With a teaspoon heap a small dollop of crème Fraiche onto two of the eggs, then add a small dollop of caviar on top and sprinkle a few chives over.
Place the chopped salmon on top two of the eggs and sprinkle over the chives.
Add the anchovy fillets and one sprig of tarragon to two more of the eggs.
And finally, sprinkle bits of bacon on the remaining two.

You'll find the heat quotient mild to medium with this recipe.
6 hard-cooked eggs, peeled and cut lengthwise
¼ cup Light Mayonnaise or Salad Dressing
1 teaspoon dijon mustard
1 teaspoon chives, chopped very fine for filling
1 teaspoon chives, chopped fine for garnish
3 dashes of hot sauce, your choice of brand and heat
1/8 teaspoon salt
¼ teaspoon ground black pepper
Paprika for garnish, or for extra kick, use a light sprinkle of chili powder
Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add mayonnaise, mustard, 1 tsp of the chives, hot sauce, salt and pepper and mix thoroughly. Fill the empty egg white shells with the mixture and sprinkle lightly with chives then the paprika.
Cover lightly with plastic wrap and refrigerate for up to one day before serving
While I have my current Deviled Eggs recipe, I'm going to have to try this one.
